Zuchinni and Potatoes Au Gratin

Inspired by a sample of cheesy potatoes at Trader Joe’s, I thought I’d put my CSA taters and zucchini to good use.

White, Green, and Fromage
5-6 small potatoes, sliced very thinly
1 medium zucchini, sliced very thinly
2 tablespoons olive oil
1/2 cup white wine
1/4 cup vegan cream cheese (or regular)
1/4 cup Parmesan cheese, grated
1/4 cup feta cheese
sea salt
freshly ground pepper

Pre-heat pan on medium heat. Add olive oil, 1/4 cup white wine, and potatoes. Cover and simmer for 5 minutes or so, until partially cooked. Add the remaining white wine and zucchini, cover and simmer for another 5 minutes, or until the zucchini is done. Reduce heat to low and add the three cheese. Add salt and pepper. Stir until all veggies are covered with the cheese. Get ready for some heavy duty fall comfort!
