Spring has sprung! This means asparagus is in season in California. If it’s ready for harvest yet in your neck of the woods, it will be soon, so I want to share this terrifically simple recipe with you.
It’s so easy being green ASPARAGUS delight
Ingredients (local, organic is ideal)
1 bunch Asparagus
2 tablespoons Extra Virgin Olive Oil (cold-pressed if possible)
Zest of one grapefruit, orange, or lemon
Instructions
Wash the asparagus. Then snap the thick ends off with your hands. Wherever they naturally break off is the right place. Over medium heat, saute the whole bunch in the olive oil for 5 minutes or until tender. Add the zest and serve. Yes, it’s that easy!
