Mo’s Bday Salad

Last weekend, a friend and I took a little day trip up to Napa for some winery-ing and then cut over to Sonoma on lovely windy country road to celebrate Mo’s Bday at her place in Sebastepol. I made this salad for the occasion and then forgot to bring it! Oops. We had a wonderful trip, complete with unexpected stop at a garden show, visits to my friend’s favorite wineries for yummy tastings, and wonderful nourishing time with Mo and her amazing circle of friends. I hadn’t seen her since she returned from her trip around the world in May, so it was quite a treat to reconnect.

Mo’s Bday Salad

orange and purple carrots, finely sliced (use a mandolin if you have one)
a variety of lettuces
mustard greens
basil, finely chopped (you can pile the leaves, roll them up, and then slice)
peaches, finely sliced (use a mandolin if you have one)
lime juice
olive oil

Toss carrots, lettuce, mustard greens, and basil together in large bowl. Soak the peaches in lime juice for 10 minutes. Add the peaches in lime juice to the salad; add olive oil to taste. Since we forgot the salad, it ended up marinating for some time, and I think that made it even more delicious later! (My friend couldn’t stop eating it once he started!) So give that a try if you have time to make it ahead.

Oh, and orange carrots would be great, too, it’s just fun to enjoy the variety available. The purple ones are especially lovely: they are purple on the outside and orange on the inside.

This was the first time I used some lettuce and mustard green from my tiny garden on my patio! The even cooler thing is that the lettuce has since grown back, so there is more to enjoy.
